The DARE Cabernet Sauvignon emits concentrated aromas of ripe black cherry, dark currant, cassis, tobacco and cedar notes with faint hints of caramel. On the mid-palate, the vibrant tannins and well-integrated oak flavors give the impression that the wine is lightly dancing over one’s taste buds. Firm tannins grace the finish. DARE Cabernet FrancThe fruit for the DARE Cabernet Franc is both from the VIADER Estate and sourced from a selected vineyard in Oakville. Our DARE Cabernet Franc undergoes an extensive cold-soaking, followed by a warm fermentation, and extended maceration on the skins for up to 45-60 days. Malolactic fermentation occurs while in 100% new French Oak barrels where the wine matures for the next 15 months tucked away in our underground caves.
Our winery-exclusive DARE Tempranillo is made from a Ribera del Duero clonal selection sourced from the northeast side of the Napa Valley. The location’s cooler climate brings in fruit which accentuates floral notes, a softer mineral to earthy edge and more fruit concentration.
Our Rosé is made from the saignée of select wines, using a majority of Cabernet Sauvignon. This Rosé wine exhibits aromas of ripe cherries, strawberries, a hint of dark licorice, cassis liqueur; but also floral notes of wisteria and violet. The lingering finish refreshes and invites another taste making it the perfect treat for any season.
